A mostly Old Vines Grenache, redolent with lifted aromatics and dulcet fruit flavours over a length of refined, sandy tannins. Shiraz contributes red berries, spices and palate weight, Touriga brings pungency, plum pudding, dried herb and floral notes. Mataro adds textural tannin structure and the perfumes of Provence. Saltram No.1 is one of the nation's great icon reds, a powerful expression of Australian Shiraz. In 1859 William Salter cleared ten acres of land at his Mamre Brook homestead near Angaston in the Barossa and planted Shiraz. On March 20 1862, Saltram crushed its first grapes and produced 1800 gallons of a wine that was simply called No 1 Shiraz. For the next thirty years, successive vintages of No.1 performed brilliantly at Australian and International wine exhibitions. The secret to the success lies in a heritage of extraordinary old Barossa vineyards.

John Riddoch founded Coonawarra as an agricultural district in 1890. His daughter married neighbour Robert Rymill, they had a son who became a distinguished equestrian and lead the 1934-37 British Graham Land Expedition to the Antarctic. It was his son who founded the Rymill wineworks in 1974. Rymill make a powerful Coonawarra wine from harvests of Shiraz grown to distinguished old vines up to forty years of age, enhanced by an extended ageing in predominantly French oak, to achieve harmony, contribute volume and enhance depth.

Some of the gnarled and twisted old vines which yield the grapes for Rockbare date back to the first days of Barossa settlement in the 1840s, when pioneers replanted their precious cuttings from Europe. Grenache is hand harvested, hand sorted and vinified to dryness over the course of a fortnight, basket pressed into seasoned French oak barriques for malolactic on lees. Vibrant, punchy and driven by red berry notes, fashioned to display fresh lively fruit character, textural complexity and a savoury finish on a fine length of malleable walnut tannins.

RockBare are raiders of precious but wayward vineyards, planted to outdated standards of viticulture, sadly unviable for large scale winemaking. These are however, precisely the nature of site that Rockbare retain. An assemblage of old and very old vines Shiraz, the ferments display exceptional properties as soon as they are crushed, exhibiting amazing tannin structure and remarkable eloquence. By any measure, a splendid McLaren Vale Shiraz, it is not often that parcels of such high quality are collated and vinified into such an opulent yet accessible wine.

Tim Burvill became aware of precious old vineyards dotted around Barossa Valley while working for some of Australia's most prominent wineries. It is from these wonderfully diverse old sites that Burvill selects the ripest and most concentrated parcels to make Mojo. Burvill's wines are in keeping with his own personal power packed fruit driven style. The moderately continental Barossa climate provides ideal conditions for the production of full bodied reds. It is these unique growing conditions and the natural sunlight which Burvill captures in Mojo Shiraz.

RockBare was born out of a passion to make great wines out of the nation's most invaluable parcels of vine. The people of Rockbare work to a belief that wine should tell a story about the terroir whence it originates, that the vines deserve lots of love and care, that the winemaking process should be the subject of minimal handling to allow the vineyard to do what it does best. Perfumed of melty rich dark chocolate, the ripest blackberries and blue plum flavours will have you reaching for another glass before the first is even half gone, made for food, suitably attired alongside a smartly dressed lamb.

Rockbare are heart, body and soul McLaren Vale. Fruit growers have been experiencing trying times of late. This has freed up some very old and precious Shiraz vineyards, which Rockbare have gleefully accepted into the fold. Tim Burvill is very gifted as a winemaker and also as a raider of isolate parcels of mature vines. He retains access to some of the Vale's best Shiraz. In the vintages since inaugural release, a number of 50+ year old vineyards have come to light, which have been assembled into an immensely satisfying experience.

A tremendous red emanating heat from it's weight of alcohol, the very first vintage of a mostly Grenache wine by RockBare, sourced from an eighty year old bush vine, dry grown vineyard. You can't pass a duck with this wine, or a piquant chorizo sausage & homemade pasta dish.

Tim Burvill worked at Wynns and Penfolds, where he refined his style alongside some of the best winemakers in the country. Establishing his own label, he embarked upon a secret project to acquire parcels of wayward Barossa Shiraz. With a backbone of fruit grown to some of the oldest sites in Australia, much of Barossa Babe comes off vines up to 140 years of age. The intense power and complexity of the primary fruit flavours are complimented by sweet oak and gripping solid tannins, culminating in a wine of extraordinary complexity and length.

Clare Valley yields world class vintages of Shiraz, soft, elegant wines with seamless textures and captivating blueberry mint perfumes. Few local estates can match the indulgence and skill of the accomplished Reilly team, matching the highest standards in vineyard management with an exacting vinification. Hand picked off superior dry grown vineyards, established circa 1920 at Watervale, treated to old fashioned open ferments and two years American oak, Stolen Block's layered palate of luscious jube fruit flavours is supported by the most succulent, licorice tannins.

Gratefully Grenache driven, delicately open fermented and gently basket pressed, vinified exclusively from fruit grown to vines planted in 1919 by a returned serviceman, who'd been granted the property as part of an ANZAC resettlement scheme. Being bushvines, they grow low to the ground and are untrellissed. Grapes are all hand picked, as modern harvesters cannot collect the fruit, ensuring inclusion of nothing but the highest quality berries.

The most exquisite bunches of McLaren Vale Grenache are selectively hand picked off dry grown vines planted to Pirramimma's oldest productive site, the famous Prisoner of War block planted in 1944. A further component, picked off Pirramimma's Katunga block, established 1968, contributes complexity, structure and depth. The assembled wine displays an elegantly perfumed nose of cherry, rose petal and chocolate spice, while the palate is laden with sweet spicy raspberry, fruit cake and black plum flavours, enhanced by savoury subtle oak.

White Label is a McLaren Vale Cabernet Sauvignon of the highest eminence, having been nominated for the George Mackey Memorial Trophy, awarded to the most outstanding Australian export. Crafted from fruit grown to some of the oldest vines at Pirramimma and McLaren Vale, it has twice claimed Gold in San Francisco and competed well against a formidable host of distinguished growths at the prestigious London International. A powerful yet, elegant wine framed by robust tannins, Pirramimma recommends a double decant if opened for early drinking.

The five most most exclusive parcels of old vine Shiraz, a secret component of the Barossa's most memorable vintages, hand picked off the De Fazio and Hillview vineyards at Belvidere and Moppa. Batches are crushed into traditional open top fermenters for a week of pumpovers, gently pressed into an extravagantly high proportion of new French oak hogsheads for two years maturation, followed by the final assemblage, unfiltered and unfined. Magenta black, powerful and intense, bramble berries and savoury cedar oak, licorice and dried fig, a mere two hundred cases are made.

The story of Stonewell began when Peter Lehmann decided to make a special Shiraz of immense intensity and muscularity that would demand time in the barrel and bottle before release, named after the district that best showed the characters he admired most in Barossa Shiraz.

Stonewell is the very best of vintage, one of the new world's great Shiraz. A powerful, stately wine, Stonewell is the jewel in the crown of Peter Lehmann's most spectacular efforts, the grapes are drawn from the lowest yielding, old vine blocks in all Barossa Valley. For his style, integrity and skill as a professional and artisan, Peter Lehmann has come to be known as Mentor by many of Australia's eminent winemakers. His conviction that the Barossa was capable of making the best wines in the world extended far beyond Shiraz, he always called it the Garden of Eden, a winemaker's paradise. When it came to selecting a wine to dedicate to Peter Lehmann, it was not without a sense of irony that the choice should be Barossa Cabernet. Magill Estate Shiraz is a very important Penfolds single vineyard wine. Hand-picked, vinified in open fermenters and then basket pressed, Penfolds Magill is an exclusive Adelaide Hills Shiraz from a grand and historical monopole.

The Magill Estate style has evolved over the years. While the early vintages were quite lean and tight, the recent releases have shown much greater fruit definition and palate vitality. The winemakers paid particular attention to flavour development and tannin ripeness for this Magill, and this release triumphs in a show of supple structures and more fruit richness. The aim of Penfolds Senior Winemaker Peter Gago in crafting Magill is to create a wine which expressess the character of the vineyard, and is more elegant in style than most Penfolds reds.

No other red wine in Australia can rival the reputation, consistent quality or proven development pattern of Penfolds Grange. The pinnacle of Australian reds, Grange is a rich, opulent, full-bodied Shiraz, destined for a long cellar life. The winemaking process involves great attention to detail, from selecting the best possible grapes sourced from low-yielding, old Shiraz vines, through to fermentation and fastidious oak maturation. The 1992 Grange has great complexity and balance, a powerful and rich vintage with mouth-coating tannins.

Established 1841, the McLaren Vale Taranga vineyards are still owned by the founding Oliver family. Even more remarkably, Taranga wines are today crafted by a sixth generation of the original winemaker. For most of the twentieth century, Oliver Taranga sold their precious yields to other wineries, much of it was destined for the nation's most esteemed labels and memorable flagship vintages. William and Elizabeth Oliver emigrated from Scotland, eventually settling McLaren Vale in 1841.
